Stuffit Deluxe can be used to uncompress .Z and .gz files and more. For .Z
files, use the Translate menu's Unix Compress/Decode menu item.
Alternatively, the shareware Stuffit Expander along with "DropStuff with
Expander Enhancer" (aka Dropstuff w/EE) can be used to perform these
chores. They're available from the usual distribution sites (e.g., Info Mac
mirrors).
Often, the reason .Z files won't decode is because they were FTP'd in ASCII
mode (7 bit) instead of Binary mode (8 bit).
The .Z file often contains a tar archive, as does a .tgz file. Stuffit
Deluxe will also extract files from tar archives. Be careful about the
CF-LF translation mode when extracting -- translation should not be enabled
for binary files.
